    Healthy breakfast meals

    So the truth is I had bought a box of eggs sometime last week, and never really got round to using them. I have five days to use them, and despite being lured by the smell of curry in today’s canteen (at work). I’ve stuck to the plan to use these eggs, and to take up the challenge of making anything but boiled eggs. I’ve made two poached eggs on a bed of wholemeal toast, tomato, and avocado; seasoned by sea salt and black pepper.     A note to you from me…

    It’s good to reflect and consider the person we want to become. For me sometimes that gets muddled up with what I want to achieve, but after taking some time out to reflect and make some bold declarations… I wanted to share with you a statement made by Jim Carrey as he spoke I a ground of graduating college students.     A ragu kind of day

    I made beef ragu today, in the slow cooker! It was so amazing, and I’ve got loads left. This is my second attempt with the slow cooker in a month. Although given the complexity of this recipe (which really means it included red wine) I feel like I should be given a star or something for cooking something so grown up. Most of my meals are packed with taste, but equally simple and easy to make; like fajitas, chilli, spaghetti. They’re not really rocket science; although, I do believe I have found the best secrets for each (in my humble opinion). And I get to have loads left for lunch…

    Tough day, but that’s ok.

    So after a great weekend away, and one very sleepy Monday (hence no blog yesterday). Today, got off to a successful start, and then it seemed to fall a little flat. I’m not sure why, but hey ho that’s ok. I’m learning lots about emotions, and how to handle them. In fact I was speaking to a friend who also had a rough day. She made a very good point, which was we have to remember what we have, and find something to be thankful for.     It’s all about that teapot

    I am on the look out for a teapot, but not just any teapot. I want this teapot!     However, as £70 is quite a lot to spend on a teapot, I am looking around for other options. It all started whilst home at Christmas, when I fell in love with the rather plain teapot he bought for his new house.
